The Cellars

We recently made a significant investment to upgrade our cellars in San Donato. The aim of these investments was to incorporate the most modern techniques to increase the quality of our wine and the efficiency of processing.

It houses the wine processing area which includes stainless steel vats, oak barrels, and anew bottling and packaging line, which has the maximum output of 2,000 bottles/hour.

Our wines are made using different techniques that vary on fermentation time, aging length, aging vessels (oak barrels or stainless steel tanks), temperature and more.

Each decision influences the character and flavor of the resulting wine. The wine refines in a dedicated stocking area to obtain its perfect ripeness after it is bottled.

Our main goal in this new project is to dedicate the greatest attention to the final phase in the creation of a good wine – its finishing and conservation.
